Ireland – Day 6

Today we are heading back toward Dublin!


Day 6 Itinerary for Thursday, February 25, 2016:

This is how the day ACTUALLY unfolded:

We left the hotel very early (thankfully the valet agreed to leave our car out front so we could simply leave in the morning rather than getting someone to fetch it from the illusive valet parking lot) and there was frost and fog covering everything. Because Leap Castle is privately owned, we decided to forgo it and head straight to Glendalough. It turned out to be a great decision! On our way, we stopped at a petrol station to fuel up and get some coffee at Costa Coffee. The coffee was pretty good and the chocolate fingers were very good too. We also had a very low tire so we filled it up with air while we were there!

Glendalough was breathtaking. The lake was like glass reflecting the huge mountains and we didn’t even really encounter people until we reached the monastic site.

After exploring Glendalough, we headed into the mountains on our way to Newgrange (we decided against going to Phoenix Park because we had already visited it twice on our bus tour the first day). We stopped at the Glencree Center for lunch. The food wasn’t great but the coffee was good.

From there we went to Newgrange and did the tour. Our bus diver was an absolute crack up telling us about all the funny things tourists ask such as, “Where are the other undiscovered ruins?” or, “Why did they build this so far from the airport?” HA! Newgrange was surprisingly (for me) awesome. I didn’t have high hopes for it and didn’t even think we’d make it to the site with everything else we had planned, but I’m sure glad we did. Our tour guide was so interesting and even did a bit of the tour in Irish.

On our way to our hotel, we got stuck in serious rush hour traffic, so by the time we got to our hotel we were famished. Some of the locals at the pharmacy told us about a restaurant called La Bucca and it was absolutely lovely!

Our final stop was to a local grocery store where we spent around $100 on chocolate and candy for the kids (and us). Have I mentioned how delicious the chocolate from Ireland is? It’s DELICIOUS!

This hotel was much different from the others as it didn’t have the castle feel to it. It was nice, though, and comfortable.


Tomorrow we leave on a jet plane, saying goodbye to Ireland.

Ireland – Day 5

Today we are heading south and west toward the Cliffs of Moher!

This is how the day ACTUALLY unfolded:

It was super cold when we left our hotel around 5:45 AM. We even had frost on the windows that Nolan scraped off with our room key! From our hotel we drove for quite some time to get to Adare. I had Adare built up in my mind to be a couldn’t miss town full of thatched cottages, old buildings, and tons of history. Though it didn’t meet my expectations, it was still a fun town to visit. We had breakfast at a little cafe where a sweet group of women met and chatted at the table next to ours. Very quaint. The food wasn’t terribly impressive, nor was the coffee, but the atmosphere was nice.

After we ate, we walked around a bit through the town looking for the places listed above. Come to find out, it was much harder than I anticipated seeing as how there weren’t sidewalks that went everywhere and the bookstore didn’t even exist! A nice local man instructed us to head to Limmerick to find a bookstore, so we jumped back in the car and headed that way.

Though there were many bookstores in Limerick, there was also a great deal of traffic and the parking was a bit far from any of them. We knew that we had so much more to do that day so we decided to just head toward the Cliffs of Moher.

The Cliffs are very beautiful, very large, and very majestic. Both Harry Potter and the Princess Bride had scenes filmed there so my husband and I were equally intrigued. The only problem was we got there too early in the day and though it was beautiful and sunny, this made the pictures of the cliffs very dark. I would recommend going around 3:00 if possible in order to actually get a good view and photo. The gift shop at the Cliffs is really fantastic. We ended up getting the rest of our souvenirs here and we even were able to mail our kids postcards!

We then left the Cliffs and drove around the Burren which was fascinating. I found it intriguing at how vast the change was in the landscape and I was very glad we decided to do this rather than drive several hours to go on the dolphin tour (though I do hear the dolphin is rather fun).

We ate dinner at a restaurant in Ennistymon which was okay, the view, however, was spectacular. I was able to take some photos of a waterfall that was right outside our window.

Our last stop of the day was our hotel which was CRAZY POSH. The Dromoland Castle Hotel is one of the nicest places I’ve ever stayed. It’s one of those, mandatory valet, I’ll take your bags, robe and fuzzy slippers kind of places and we thoroughly enjoyed it. We ordered a beautiful piece of chocolate cake and ice cream (that cost more than our dinner, mind you) and enjoyed every last bite in our robes and slippers while watching a movie on television.

Tomorrow we head back toward Dublin and see some beautiful sites!

Ireland – Day 3

On our third day in Ireland we headed north to Belfast and Northern Ireland!

This is how the day ACTUALLY unfolded:

We woke up early again and headed north toward Belfast. We were super excited that we would be going into a different country and to see how Northern Ireland and the Republic of Ireland differed. We took a toll tunnel out of Dublin that was pretty neat to go through though it was relatively pricey. There are tolls in various places throughout Ireland. Make sure to have some cash handy to pay these tolls. Also there’s a license plate toll on the M50 but only parts of it. You have to make sure you keep track of them and pay them online, otherwise the rental car company will take the payment and any late fees off your credit card.

The trip to Belfast took much longer than we anticipated because we were hungry and got off the highway in search of food. So by the time we reached the city, we didn’t have time to go sightseeing. We did, however, make sure to take the Crumlin Road Gaol (Jail) tour and it was MAGNIFICENT. We had a tour guide named Gavin and he was incredibly knowledgeable, though slightly hard to understand. He also had a hard time understanding us, which we found to be the norm for most people in Northern Ireland. Our tour lasted about an hour and a half and was very intriguing. Though we couldn’t take video, we were allowed to take still photos!

Once we were finished here, we took the windy coastal route up to the Giant’s Causeway. It took a bit longer to take the coastal route but it was absolutely stunning. The weather changed several times on our way but once we reached the causeway, we were greeted with sunshine!

When we researched the Giant’s Causeway I had it in my head that it was a huge area of these hexagonal stones. While it was a wonderful site and something you definitely shouldn’t miss, I think you’ll be surprised, as we were, to see that it’s not as huge as was anticipated. We loved it nonetheless!

Next up, we went to the Bushmills Distillery which was very close to the causeway. Though the tour was fun and interesting, I was rather bummed that I couldn’t take any pictures during. I did find it interesting how they have various types of whiskey that are aged different lengths of time in various barrels in order to give each a distinct flavor. Though we were given a sample of the 10 and 12 year flavors, we only had a sip of each before we were on our way to go see the Dunluce Castle and Mermaid’s Cave. The bartender must have thought we were crazy returning our nearly full glasses but we didn’t want to have alcohol in our systems when we were driving plus we didn’t have much time before the castle would close!

I am so happy that we decided to go to the Dunluce Castle and Mermaid’s Cave. It is a beautiful castle but beyond that, the views off the side of the cliff that the castle is perched on are stunning. The Mermaid’s Cave is below the castle and if you are willing to walk down and back up approximately 120 stairs, you’ll find yourself in for a treat!

From here we had a LONG drive back to our hotel, so we found a nice little place to eat called Granny Annies and WOW the food was AMAZING especially the chocolate cake and ice cream. My mouth is watering just thinking about it right now! Yum!

The trip home was curvy and dark and rainy and the posted speed limits are for crazy people, like my husband, who like to race tiny cars around crazy mountain passes when there’s only enough room for maybe a car and a half to fit between the hedges or rock walls that line the roads. Needless to say, I was happy to be at our hotel! (Don’t get me wrong, my husband is a phenomenal driver. I’m just a worrier.)

The Kilronan Castle Hotel was another beautiful place to stay. It had the real castle feel complete with suits of armor and thrones, while still being very posh and cozy. This was probably my favorite place we stayed while on this trip.

Ireland – Day 2

Day 2 Itinerary for Sunday, February 21, 2016:

This is how the day ACTUALLY unfolded:

We woke up after the most amazing sleep ever! Okay, maybe it wasn’t the most amazing sleep, but after being awake for so long, sleep was very welcome! Breakfast at the hotel was lovely, a wonderful assortment of familiar and unfamiliar (puddings) foods awaited our salivating mouths.


We left the hotel right on schedule in order to get to the Rock of Cashel as close to opening time as possible. The Rock of Cashel was absolutely beautiful! It seemed to be having some updates so there was a bit of scaffolding around it, but that really didn’t take away from the majesty of the castle. This particular castle is situated at the top of a very steep hill that you must walk up in order to visit. On this particular day it was relatively cold as well as VERY windy, so we made our way up the hill slowly while holding onto our hats!

Our next stop was Cahir Castle which was wonderful as well! Where the Rock of Cashel had no roof and was very weathered, Cahir Castle had beautiful white washed walls and the roof still firmly attached. One of my favorite parts of Cahir Castle was the light up display that told you the story of a battle by pressing various buttons showing you how they were invaded. It was fun going back outside and picturing how it all happened.

On our way to our next destination, Blarney Castle, we ate some sandwiches in the car. I got a kick out of the open tab on the ham that says “Release the Ham” and though the ham, cheese, and bread had a bit of a different taste than we’re used to in America, it was a great meal! We even had enough to eat the next day too! This was a very cost-effective way to eat while staying within budget. Oh and I must mention the chocolate, Ireland has the BEST. CHOCOLATE. EVER! It is so creamy and delicious!

Onto the Blarney Castle…


The Blarney Castle was AMAZING! I wish I would have known how much there is to see besides the Blarney Stone. The complex is gigantic with gardens and houses and caves and so much more! We didn’t get to explore as much as I had hoped we would since we had so many other things we wanted to see that day, but we did get to kiss the Blarney Stone and receive the gift of gab!

After this we decided to forgo going to the Woolen Mills and head straight to Kilkenny in hopes to get to see at least a couple of the attractions. What we hadn’t learned yet is that in Ireland everything closes really early. Like 5:00 early. So when we got to Kilkenny almost everything was closed. We did happen to find a Carol’s gift shop where we proceeded to spend a crazy amount of money on gifts for our family.

The other thing we learned quickly is that not all of the Pubs serve food in Ireland. So if you want to eat, you should definitely make plans to eat early or at your hotel! On our way back to our hotel we searched and searched for a place on Trip Advisor to eat (we got the in-car WiFi which was AMAZING and absolutely worth its weight in gold) and we finally found a place not too far from our hotel called McLoughlin’s Bar. It was an Irish Pub that did serve food, hooray, and good food at that!

Ireland – Day 1



When my husband and I found a 7 day/6 night Castles of Ireland Groupon, we jumped right on it! Though we had never been to Ireland and Ireland probably wouldn’t have been top of mind if asked where we’d like to vacation, we had an absolutely wonderful time! This series will detail our trip in hopes that anyone who might like to visit Ireland in the future will have our experience as a reference. I know when I was planning our trip, I read innumerable blogs about packing, international travel, what to see, what to buy, etc.

I’ll start off by letting you in on a not-so-secret insight into my marriage. We LOVE to travel. In addition to travel, we LOVE to drive, especially my husband. So when we realized this trip came with a car rental, we were over the moon! Our plan was to circle the entire Island and see just about everything we possibly could!

Day 1 Itinerary for Saturday, February 20, 2016:

Little did I know when I planned this itinerary that we would be completely exhausted from not sleeping on the airplane and it being midnight our (Iowa) time when we started the day! Oops. Oh well, you live and learn!

So here’s how the day REALLY went:

We started off by landing in the Dublin Airport which is absolutely beautiful. We had no problems retrieving our luggage (hooray for free checked bags on international flights!) and because we were a bit early landing we were even early to pick up our car at Dan Dooley. The first car we picked up wouldn’t go into third gear (my husband, Nolan, is a fabulous driver, even when everything is backwards, so I knew it was the car when he was having troubles and sure enough the rental guy tried it out and realized third gear was busted) so we got another car, a Ford Fiesta, and off we went to chase down the Dublin sunrise.

We parked at the Q Park Four Courts even though everyone told us not to drive into Dublin and park including the rental car people. They suggested we drop our car off with our bags at our hotel and take a shuttle in. I didn’t want to waste the time and I was willing to pay the €4.00 for the day of parking, so we went against their suggestions and I’m glad we did!

When we got to the parking garage it was still dark and it felt like we were the only people in the city! We realized as the sky began to turn colors that the fog was going to obliterate any chance of a sunrise we might be able to have, so instead of walking all the way down to Dublin Bay, we headed to Merrion Square to check out the beautiful Doors of Dublin!

Merrion Square Park was closed for construction purposes but we walked around it and saw the statue of Oscar Wilde through the fence which was great!


At this point, we were already exhausted and ready to pass out so we went to O’Callaghan Mont Clare Hotel and had a delicious breakfast with wonderful coffee! Overall, Ireland has amazing coffee and food! The hotel staff was incredibly helpful and understanding of our exhaustion and kept the coffee coming. They even helped us purchase our tickets for the CityScape Luxury Sightseeing (Yellow) Hop-On Hop-Off bus.

A little bit about the Hop-On Hop-Off busses: I researched and planned on purchasing tickets for the Green bus, however, it was much pricier (almost double) than the Yellow bus was so we went with the Yellow bus and it was SO worth it. Our tour guides were amazing, there were busses all over and didn’t keep us waiting long, and the open air seating on top would have been so much fun had it not been raining.

Once we finished breakfast, we walked to Trinity College and took the Book of Kells tour. It was fabulous. The Old Library is breathtaking, I wish I could bottle the smell of the old books, and the Book of Kells is an amazing sight.

When our tour was finished, we did a bit of shopping on Nassau St. There were so many cool shops but we didn’t actually purchase anything at this point since we still had several hours left in our day and we didn’t want to tote everything around with us. Luckily, we were able to flag down one of our busses on this road (apparently they don’t normally stop where they did) and Nolan was able to get some shut eye while we drove around nearly the entire hour and a half route.


When we got close to the parking garage where we had parked, we decided to go back to the car so I could sleep a bit. We probably slept about 15-20 minutes in the car, took some Tylenol for our feet, and then walked to the Guinness Storehouse in the rain. The weather was definitely getting rainier as the day went on, but we came prepared with proper shoes, jackets, hats, gloves, and an umbrella!


The Guinness Storehouse was absolutely flooded with people and we had to stand outside in a line that wove its way around the building for about 30 minutes. I was actually surprised with how quickly the line moved! The tour was fabulous and well worth the money spent to take it. The only part that was a bit of a letdown was the Gravity Bar at the top of the building that boasts the best views of Dublin. I’m sure that’s true when they don’t have ten thousand people packed into the room and nowhere to take a picture from. We quickly exited back down the many flights of stairs.

Outside we waited for a Yellow bus to stop and it took us back close to where our car was parked. From there, we drove to our hotel, the Fitzpatrick Castle Hotel. I have nothing but positive to say about the Fitzpatrick Castle Hotel. We had a slight error in our booking, we had paid for breakfast but it didn’t come across, and the hotel staff took it upon themselves to contact our travel agent to confirm. Not only was the staff excellent, the food was wonderful both in the Dungeon Bar (where Nolan fell asleep sitting up at dinner) and the morning breakfast. Our room was elegantly decorated, had a beautiful bathroom, and a gorgeous view of Dublin Bay/the Irish Sea.

This ends our first day. It was a wonderful way to start our trip. We didn’t get to do everything we planned on doing but we wholeheartedly enjoyed Dublin. The only thing I wish we could have seen was the Archaeology Museum’s bog bodies. Before I travelled to Ireland, I was given the name of an author that writes mysteries that center around these bog bodies. Her name is Erin Hart and I would HIGHLY recommend reading Haunted Ground and Lake of Sorrows before you travel to Ireland. They are fantastic and I can’t wait to read the rest of the books in the series!

Healthy Cooking and Meal Planning

If you know me, you know I’m not the meal planning type of girl. That was until my new hubby asked if I could put together a shopping list for a week of dinners. I had no idea what to put on it. I usually just went shopping whenever I needed something, but since most of my staple food was either left in Colorado with family or the non-perishables were still buried in boxes, I had to come up with a plan (and buy a bunch of stuff that you probably already have in your kitchen).

I was thrilled when this plan ended up being 5 nights’ worth of dinners for a family of four under $100! Since we have a bad habit of going out to eat, the thought of making a meal for under $20 for all four of us (when even the cheapest restaurant will run at least $40) was thrilling!

And the best part… they’re all relatively HEALTHY meals! WOO HOO!

One-Pot Tomato Basil Pasta

  • 12 Ounces Linguini Pasta (Whole wheat to make it fit my diet)
  • 1 Can Diced Tomatoes with Liquid
  • 1 Large Onion, cut in julienne strips
  • 4 Cloves Garlic, thinly sliced
  • 1/2 Teaspoon Red Pepper Flakes
  • 2 Teaspoons Dried Oregano Leaves
  • 2 Large Sprigs Basil, chopped
  • 4 1/2 Cups Vegetable Broth
  • 2 Tablespoons Extra Virgin Olive Oil
  • Parmesan Cheese for garnish


Place pasta, tomatoes, onion, garlic, basil, in a large stock pot. Pour in vegetable broth. Sprinkle on top the pepper flakes and oregano. Drizzle top with oil.

Cover pot and bring to a boil. Reduce to a low simmer and keep covered and cook for about 10 minutes, stirring every 2 minutes or so. Cook until almost all liquid has evaporated – I left about an inch of liquid in the bottom of the pot – but you can reduce as desired .

Season to taste with salt and pepper , stirring pasta several times to distribute the liquid in the bottom of the pot. Serve garnished with Parmesan cheese.

French Dip

  • 2 tablespoons olive oil
  • 3- to 4-lb eye of round roast
  • Kosher salt and black pepper
  • 4 Medium onions, cut into ½-inch thick rings
  • 1 packet dry onion soup mix
  • 1 (10 ½-ounce) can low-sodium beef broth
  • 1 (12-ounce) beer
  • 4 tablespoons unsalted butter, melted
  • 12 French rolls
  • 12 medium slices provolone (mild or sharp)


Heat the olive oil in a large skillet over high heat. Season both sides of the roast with salt and pepper. Sear the roast in the pan, about three minutes per side.

Lay half the onion rings in the bottom of the 5 quart slow cooker. Place the seared roast on top of the onion rings. Sprinkle the contents of the dry onion soup packet on top of the roast then layer on the rest of the onion rings.

Pour the beef broth and the beer over the roast. Cook on low heat for 6 hours. Shred the meat with two forks.

Preheat the broiler. Split the rolls and brush each side with melted butter. Place them buttered-side up on a baking sheet. Broil until golden and crusty, about 3 minutes.

Place a slice of provolone on each roll, then top with the shredded beef and onions. Serve with some of the cooking broth in a small dish for dipping.

Chicken Noodle Soup

Chicken Noodle Soup

Soup Ingredients:

  • 1 Whole Chicken – Neck, gizzards, and livers removed. (Or I just use chicken breasts)
  • 2 Bay Leaves
  • 2 Long Celery Stocks – Chopped Fine
  • 5 Thin Carrots – Peeled and Sliced
  • 4 Tbl. Dry Chicken Flavored Vegetable Base.(canned Chicken broth will work as well)
  • 1 Tsp Onion Powder

Homemade Noodle Ingredients:

  • 3 Eggs
  • 2 Tablespoons Vegetable Oil
  • 1/2 Teaspoon Baking Powder
  • 1 1/2 Cups All Purpose Flour (You may use more or less than this depending on the size of your eggs – Your dough should be stiff enough to roll out!)
  • Salt and Pepper

Directions for Soup:

Combine all ingredients in a crock pot and let simmer for several hours until the chicken is falling off the bones. Remove chicken and continue to cook broth and carrots. (You will need this to be boiling to drop your egg noodles into.) At this time you may need to add more water with base, or broth. De-bone chicken and add back to pot.. be very careful…VERY HOT! Replace lid and let it boil for a few minutes. Prepare and cut egg noodles from recipe below and drop into the boiling pot. Don’t worry if they sink they will float in a minute. Stir after dropping every few handfuls in. Cover and let cook for another 20 or so.

Directions for Noodles:

Roll out on floured board – making sure to flour both sides to prevent sicking. Roll up loosely! Cut in 1/4 inch pieces and add to boiling soup. Cook at least 20 min in a boiling broth to insure proper cooking.

Enchilada Pasta

  • 2 tablespoon of extra virgin olive oil
  • 2 cloves of garlic, minced
  • 1/2 of a small onion, diced
  • 1.25 pounds of taco seasoned ground turkey meat or 1.25 pounds of lean ground beef and packet of low-sodium taco seasoning
  • 2 cups of low-sodium chicken broth
  • 1 19oz can of red enchilada sauce
  • 8oz (about 2 1/2 cups) of dried rotini pasta
  • 2 cups of freshly shredded Colby Jack cheese
  • Green Onions
  • Black Olives


  1. In a large skillet or sauté pan, sauté garlic and onions in olive oil over medium low heat until softened.
  2. Add ground turkey meat and cook, breaking meat up with a wooden spoon until browned.
  3. Once turkey meat is cooked through, add pasta, chicken broth and enchilada sauce to pan.
  4. Bring to a boil, then reduced heat to low and cover.
  5. Cook on low, with pan covered for about 15 minutes.
  6. Then remove lid and let simmer for additional 5 minutes until pasta is tender and sauce has reduced.
  7. Remove from heat and stir in 1 cup of cheese.
  8. Top pasta with additional cup of cheese and melt under broiler for a minute or tow, or place lid back on pan and let heat from the pasta melt the cheese.
  9. Garnish with black olives and green onions.

  • Large Can Stewed Tomatoes
  • Small Can Black Beans
  • Small Can Pinto Beans
  • Small Can Kidney Beans
  • 1-2 Pounds Ground Beef
  • 1-2 Packets of Chili Seasoning (one for each pound of beef)
  • 1 Jalepeno
  • 3 Bell Peppers
  • 1 Onion


Chop the onion, bell peppers, and jalepeno (more seeds = greater heat) and sauté them in a pan of olive oil. Brown the meat and add chili seasoning. Add the meat, veggies, and cans of tomatoes and beans to a slow cooker and cook on low for 4-6 hours. This can also be cooked on higher heat in either a slow cooker or a pan on the stove for 1-2 hours.
